A Taste of the Exotic

Taste Test: IMAM FUSION
BusinessDay Magazine, February 2005
For gourmet adventurers and restaurant partners Jimmy Concepcion
and Butch Baliao, IMAM is more an acronym of four extraordinary
cuisines than a reference of that archetypal holy man of prayers.
By choosing India, the Mediterranean, Africa and Middle East and
all their countries' countless foods and spices as their
inspiration, Concepcion and Baliao have came up with a wide array
of liberally spiced dishes that offers an immensely pleasurable
dining experience.

ZIGGURAT: MIDDLE EASTERN/AFRICAN
Guide to Restaurants in Manila
Located on Makati Avenue, this little restaurant has hospitable
and intimate surroundings. It literally means "step pyramid"; a
Pyramid being a temple and Ziggurat the "enlightened food temple".
Seating is on pillows laid out on the floor around the tables, so
do wear something comfortable! The menu is well-balanced; serving
Middle Eastern, African, Mediterranean and a few Indian dishes
designed with experience and skill by Chefs Buck and Jimmy.

ZIGGURAT
Stopover, Volume 4/Issue 15
Why we think it's romantic: Imagine yourself reclining with the
one you love on plump, jewel-toned cushions in a dim room. Gauzy
draperies hang down from the ceiling lending an air of mystery and
just the slightest suggestion that perhaps you are in a harem.

ZIGGURAT
Manual Yearender Issue
The restaurant's secret hook is the hookah. The hookah, also known
as shisha in the Middle East, originated in Turkey over 500 years
ago.
The hookah is a large water pipe used for smoking tobacco (wink, wink).
The smoking apparatus consists of four parts: agizlik
(mouth-piece), lule (the top of the hookah or cone), marpuc (the
tube), and the govde (the body of the pipe which is filled with
water). Incidentally, those are also the names of the members of
the latest Turkish boy band the Hummus Hunks. Ziggurat sells
tobacco in cola, apple, lemon, strawberry, vanilla, mango, peach,
and apricot flavors. The fun never stops because you can change
the water in the pipe to tequila, champagne, or any alcohol of
your choice. The smoke from the hookah is relaxing and has a
sensual effect especially for the ladies. One cone lasts
approximately an hour but the ladies will think you're mister
smooth for days.

ZIGGURAT
Metro Magazine, April 2004
If my friend didn't tell me about a really amazing Middle Eastern
restaurant called Ziggurat, I would never have known this place.
Co-owned by the former architect-turned-restaurateur of Al-Jazeerah
fame, Butch comes out of Quezon City into the heart of expat land,
Makati Avenue. I think now he has a better, more appreciative
audience.

Ancient Arrangements
Preview Magazine, November 2004
Chic dining rooms can be so stiff. For a little more intimacy,
head to the dimly-lit Ziggurat, where thick pillows are used in
lieu of chairs. The fledgling establishment, named after the step
pyramids of worship in Mesopotamia, offers a mix of Indian,
Mediterranean, African, and Middle Eastern cuisine.
